a S.I.M.P.L.E crock pot recipe

Creamy Black Bean Salsa Chicken


2-4 chicken breasts (boneless)
3/4 c. chicken broth

1 c. salsa

1 can corn drained

1 can black beans drained

1
pkg Taco seasoning
1/2 c.
sour cream
1 c. grated cheese


1. Place chicken breasts in crock pot. Add taco seasoning, broth, salsa, corn and black beans.
2. Cook on low for 5 hours ( I use frozen chicken and cook on high for 5 hours)
3. After 5 hours, I pull the chicken out and shred
it, then add the sour cream and cheese.
4. Serve over rice.

This is a huge hit at our house. We are chicken and rice people! The chicken is so tender, it's delicious. Thanks to my friend, Lorianne for the recipe - even Clay likes it!

Just have to tell you that I made this yummy dish on Sunday. We enjoyed it and the leftovers went great in a soft tortilla for lunch! Thanks for sharing!!
